Ingredients
  

For the Crust:

  • cups All-purpose flour
  • ½ cup Unsalted butter (chilled and cubed)
  • 1.5 tbsp Date sugar 15g of Date Sugar in 1.5 tbsp
  • 1 Egg yolk
  • 2–3 tbsp Cold water

Option 1 For the Filling: Chopped Dates

  • 1 cup Date sugar 150g of Date Sugar in a cup
  • cups Pitted dates (chopped) Medjool Dates
  • ½ cup Water
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ tsp Clove
  • 1 tbsp Lemon juice
  • 1 tbsp Unsalted butter

Option 2 For the Filling: Date Paste

  • 1 cup Date paste 250g of date paste in the cup
  • ¼ cup Water
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ tsp Clove
  • 1 tbsp Lemon juice
  • 1 tbsp Unsalted butter

For Garnish:

  • Powdered sugar (optional)

Instructions
 

Prepare the Crust:

  • In a mixing bowl, combine flour and date sugar. Add chilled butter and rub it into the flour mixture with your fingertips until it resembles breadcrumbs.
  • Add the egg yolk and cold water, one tablespoon at a time, mixing until the dough comes together.
  • Roll the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for 15 minutes.

Make the Filling:

    If Using Chopped Dates:

    • In a small saucepan, combine chopped dates, water, and date sugar. Simmer over medium heat until the dates soften, about 5–7 minutes.
    • Stir in cinnamon, nutmeg, clove, and lemon juice. Simmer for another 2 minutes, then remove from heat.
    • Mash the mixture into a paste-like consistency and stir in the butter for a glossy finish. Let it cool.

    If Using Date Paste:

    • In a small saucepan, combine the date paste, water, and lemon juice. Stir over medium heat until smooth and combined.
    • Add cinnamon, nutmeg, and clove, stirring to blend. Simmer for 2–3 minutes to thicken
    • Stir in the butter for a glossy finish. Let the filling cool.

    Assemble the Tart:

    • Preheat your oven to 350°F (175°C).
    • Roll out the chilled dough on a lightly floured surface and fit it into a 9-inch tart pan. Trim the edges and prick the base with a fork.
    • Blind bake the crust for 10 minutes, using parchment paper and pie weights. Remove the weights and bake for another 5 minutes.

    Fill and Bake:

    • Spread the cooled date filling evenly into the tart shell. Smooth the top with a spatula.
    • Bake the tart for 20–25 minutes, or until the crust is golden and the filling is set.

    Cool and Serve:

    • Allow the tart to cool completely before slicing. Dust with powdered sugar, if desired, for an elegant finish.

    Notes

    • Customization: Add raisins or chopped nuts to the filling for added texture and flavor.
    • Storage: Store the tart in an airtight container for up to 3 days.
